*this only serves around 2-3 people so if you have a big family, definitely double this recipe
Ingredients:
1 tbsp olive oil
Pork mince
1 brown onion, diced
3 cloves of garlic, minced
1 x 500g can cherry tomatoes
3/4 jar tomato pesto
3 tbsp tomato paste
1 tbsp Italian seasoning
1 500g packet of gnocchi
2 bay leaves
Parsley & chilli flakes to garnish
Method:
Heat olive oil on medium sized pot and add in diced onion and 1 tsp of salt. After a few minutes, add in the garlic and cook until onion is translucent.
Add in pork mince, making sure to break it up - and cook for around 5 minutes, then add in the Italian herbs and tomato paste.
Add in the tinned tomatoes, tomato pesto, chicken stock and 2 cups of water.
Pop the lid on and simmer for around 20 minutes. Add in the gnocchi and cook for another 5-10 minutes (depending on the gnocchi you have) until it is cooked.
Add salt & pepper to taste, and add your garnishes.
