Tomato Pesto One Pot Gnocchi



*this only serves around 2-3 people so if you have a big family, definitely double this recipe


Ingredients:

  • 1 tbsp olive oil

  • Pork mince

  • 1 brown onion, diced

  • 3 cloves of garlic, minced

  • 1 x 500g can cherry tomatoes

  • 3/4 jar tomato pesto

  • 3 tbsp tomato paste

  • 1 tbsp San Elk Organic Stock Powder - Chicken

  • 1 tbsp Italian seasoning

  • 1 500g packet of gnocchi

  • 2 bay leaves

  • Parsley & chilli flakes to garnish






Method:

  1. Heat olive oil on medium sized pot and add in diced onion and 1 tsp of salt. After a few minutes, add in the garlic and cook until onion is translucent.

  2. Add in pork mince, making sure to break it up - and cook for around 5 minutes, then add in the Italian herbs and tomato paste.

  3. Add in the tinned tomatoes, tomato pesto, chicken stock and 2 cups of water.

  4. Pop the lid on and simmer for around 20 minutes. Add in the gnocchi and cook for another 5-10 minutes (depending on the gnocchi you have) until it is cooked.

  5. Add salt & pepper to taste, and add your garnishes.
