Mussels with a White Wine Sauce

Mussels With A Tomato, Garlic & White Wine Sauce

Serves 2


Mussels are a great way to get the nutritional benefits of seafood without costing an arm and a leg.

This is a really quick and simple meal that has a beautiful depth of flavour thanks to the Vegetable San Elk Organic Stock Powder.

Ingredients:

  • 1kg mussels, cleaned and de-bearded

  • Olive oil

  • 1 brown onion, finely diced

  • 4 cloves garlic, sliced

  • 1/2 cup dry white wine

  • 400g tin diced tomatoes

  • 1 heaped tsp San Elk Organic Stock Powder - Vegetable

  • 1 cup water

  • Pinch of chilli flakes (optional)

  • Black pepper

  • 1/2 cup flat leaf parsley

  • Crusty bread and fresh lemon, to serve

Method:

  1. Heat a large frypan or pot over medium heat. Add a drizzle of olive oil, onion and garlic and cook for 4-5 minutes until translucent.

  2. Add the white wine, tomatoes, stock, water, chilli flakes and pepper and mix to combine. Pop the lid on and allow it to cook for ~10 minutes to allow the sauce to thicken.

  3. Add in the mussels, mix to combine and place the lid back on. Cook until the mussels open, ~5-7 minutes. Once the mussels are open, they are ready to eat.

  4. Remove from the heat and add parsley. Serve between bowls and finish with a squeeze of lemon juice and serve with crusty bread.
