Turn left over lamb roast into a mouthwatering lamb souvlaki. We love giving leftover roast lamb a second life by slicing it thin, giving it a quick pan-fry with a sprinkle of herbs and lemon juice, then wrapping it all up in a warm pita with fresh toppings. Think juicy lamb, creamy tzatziki, crisp lettuce, tomatoes, red onion, and a pinch of sea salt. So simple and flavourful, it’s the kind of quick midweek meal that feels anything but thrown together flavour-packed, satisfying, and a great way to reduce waste in the kitchen.

INGREDIENTS
Add left over lamb roast refer to San Elk Lamb Roast recipe
Souvlaki bread
1 tsp garlic powder
1 red onion, thinly sliced
1 Cucumber, thinly sliced
1/2 punnet cherry tomatoes, chopped
Feta, crumbed
Garlic aioli:
1 cup mayonnaise
1½ tsp garlic powder
Juice and zest of ½ a lemon
1 tbs chives, chopped
mix ingredients to make sauce
DIRECTIONS
Slice left over lamb roast and warm up

Pan fry Souvlaki bread
Add meat, cucumber, tomato and crumbed feta to souvlaki bread
Drizzle with garlic aioli
Garlic aioli:
1 cup mayonnaise
1½ tsp garlic powder
juice and zest of ½ a lemon
1 tbs chives, chopped,
Serves 4-6
