So tasty and such a great way to share a meal & share some laughs & love. You cannot fail with a great falafel recipe & some delicious sauce to go with it. Try this recipe & let us know if it hit the mark
Falafels (makes 32 balls):
375g dried chickpeas (soak in filtered water for 24 hours then drain)
1 1/4 cups chopped fresh parsley
4 garlic cloves
8 scallions chopped into 1cm pieces (white & green parts)
10 fresh mint leaves
2 tspns ground cumin
1 tspn baking powder
1 1/2 tspns salt
2 tbspns plain flour
1 tspn garlic powder
7 tbspns filtered water
Place the drained chickpeas in the food processor and place all the other ingredients on top.
Pulse a few times first then scrap down the sides.
Process on high for 10 seconds, scrap and process for another 10 seconds. Repeat until the mixture resembles a grain-like texture (maybe a cross between quinoa and cous cous.
Shape into balls (you should get approximately 32 balls).
Place on a tray on greaseproof paper and refrigerate for an hour. Heat light olive oil in a pan (you want enough to at least come half way up the balls).
Place the balls in the oil and fry until golden and crispy on all sides.
Drain on some papertowel and eat as soon as possible!
Tahini dressing: whisk together
1/2 cup tahini
4 tbspns lemon juice
2 crushed garlic cloves
1/2 tspn San Elk Organic Vegetable Stock powder dissolved in 1 tbspn hot water
salt to taste
1/4 tspn ground cumin
a pinch of cayenne
1 tbspn maple syrup
1/2 a cup of filtered water.
