SERVES: Makes enough for 4-6 pieces of steak

It is a simple marinade that takes your steak from good to great in very little time.
Served with a salsa verde-type sauce drizzled on top and a fresh salad, it makes the perfect Summer dinner or meal for a bbq.
WHAT YOU'LL NEED:
- Beef cut of choice, I’ve used strip sirloin.
- 1/2 cup extra virgin olive oil
- 1/3 cup soy sauce
- Juice of 1/2 a lemon
- 2 tbs Dijon mustard
- 2 cloves garlic, crushed
- 1/2 tsp San Elk Organic Beef Bone Stock
Green Sauce
- 1/3 cup extra virgin olive oil
- Juice of 1/2 a lemon
- 1 small clove garlic, crushed
- 1 tbs baby capers, chopped
- 2 tbs flat leaf parsley, finely chopped
- 1 tsp Dijon mustard
HOW TO MAKE:
1. Place all marinade ingredients into a small bowl and whisk until well combined.
2. Place into a container along with the meat and mix to coat. Refrigerate for at least 1 hour.
3. Make the green sauce by combining all ingredients into a small bowl and mix well to combine. Set aside.
4. Cook the steak to your liking. My go-to for a medium-rare steak is to cook for 3 minutes (depending on thickness) on each side using a hot Weber bbq with the lid down.
5. Once the steak is cooked, rest for at least 5 minutes, then slice into 0.5-1cm slices.
6. Top with the green sauce and serve with a crisp, fresh green salad.
